VINIFICATION

Crushed and de-stemmed and allowed to sit on skins for 3-4 hours in the press, to gain from extraction. Cool ferment in a number of small batches and then the best portions underwent assemblage. Minimal handling and ?ning.

COLOUR

Bright lemon gold.

NOSE

Lifted honey, pear, apricot and orange blossom.

PALATE

Rich, full and luscious with honey, lemon and poached pear syrup that coats your mouth. A hint of spice on the mid palate and excellent acidity on the ?nish, combine to produce the ‘?nale’ to this smart wine.

FOOD MATCH

Keralan Fish Curry (Sri-Lankan) or honey roasted pears wrapped in prosciutto and stuffed with brie.

WINEMAKERS COMMENTS

The fruit for this wine is sourced from the Ants Nest vineyard, high in the Waihopai Valley. The clay soils impart minerality and a ?neness, which is balanced by the dry ?nish.
