Crushed and de-stemmed and allowed to sit on skins for 3-4 hours in the press, to gain from extraction. Cool ferment in a number of small batches and then the best portions underwent assemblage. Minimal handling and ?ning.

The fruit for this wine is sourced from the Ants Nest vineyard, high in the Waihopai Valley. The clay soils impart minerality and a ?neness, which is balanced by the dry ?nish.
