Following pressing, each batch of juice was kept separate in 100% stainless steel tanks. Each tank was then fermented using a variety of yeast strains, with around 8% fermented in a combination of new and old French oak. Once fermentation was complete, each batch was assessed for quality, with the best batches being blended together in preparation for bottling.

Luscious with summer ?avours of tropical fruits, white peach and grapefruit ?lling your palate with a lovely intensity and ?nishing long and clean. As usual the Catalina has layers of ?avour ranging from citus lemon lime to tropical and even grass on the other end of the spectrum.
