100% Pinot Gris
Marlborough, New Zealand.
Fruit was hand-harvested, whole bunch pressed, cold settled then racked and inoculated. The yeast strain was selected to accentuate the aromatics of the fruit and to enhance the mouthfeel and texture of this wine. The wine remained on yeast lees following fermentation for 8 months which also helped to fill out the fine long palate. Approximately 7% of the final blend was fermented in large French oak puncheons which add lovely layer of savouriness and complexity.
Lifted varietal pear and delicate floral aromatics.
A very fine and textural long palate, with creamy and crisp flavours mingling intriguingly accross the palate. The palate is sugar dry yet has a generous fruit sweetness which makes this wine clean, satisfying and not cloying.
Katsu-don, or miso baked salmon steaks with seaweed salad.
Vintage 2010 was extremely kind to us, with a long Indian summer providing perfect conditions for good flavour development and natural balance in the fruit. The season produced Pinot Gris that had beautiful ripe fruit flavours without high sugars which means we can make a balanced wine without higher alcohol that Pinot Gris can at times be prone to. As always we strive for elegance and texture in our wines, which we believe we have achieved in this 2010 Catalina Sounds Pinot Gris.
