100% Sauvignon Blanc
Marlborough with the majority of fruit coming from our home vineyard Serendipty Estate in the Waihopai Valley.
The fruit was predominantly machine harvested and the juice cold settled, racked and inoculated with a variety of yeast cultures – some to accentuate aromatics, others to bring a textural component. Ferments were largely untouched allowing the fruit to express itself, and the wine remained on yeast lees post fermentation to build an extra textural element. A small amount of fruit was hand harvested, whole bunch pressed and run to new oak puncheons for hot fermentaion, adding a layer of richness and complexity to the palate.
Bright and powerful with a mixture of exotic, tropical fruits, citrus and an alpine herbal note particular to our home vineyard Serendipity Estate.
Rich and round, and framed by a clean acid freshness, the palate exudes flavours of passionfruit pith, citrus and a crunchy flintiness. Flavour persistence is a hallmark of the wine.
Enjoy with citrus-dressed salads, aromatic seafood and light poultry dishes.
2012 proved to be a season of great contrasts; a cool cloudy Summer resulting in poor flowering and therefore light crops, was followed by a spectacularly sunny and crisp Autumn allowing for maximum aromatic development and flavour concentration. As always with Catalina Sounds, we have allowed the fruit to fully express itself and added an extra layer of interest via a small amount of oak fermentation and aging on yeast lees, to coax out the interesting textural elements of the wine.
A refined and pretty sauvignon with lemon blossom and guava aromas and a palate of tangy passionfruit, lime zest and subtle green pea notes. It finishes long, clean and zesty, with a vibrant acid line. A value offering in the vast Marlborough sauvignon category. Drink: 2012-2013.
